Vegetable Omelet

Good morning! If you have just woke up and want to dig into something Farmers Market Fresh, a vegetable omelet  with your choice of fresh produce is a perfect way to start off the day. To start, check out your Farmers Market Grocery List to know what to pick up. Then, follow along with the pictured directions to make an omelet out of ingredients easily found at many local Farmers Markets. For this recipe, we recommend the Gilbert Farmers Market which has vendors for both fresh eggs and cheese which adds a fresh flare to the recipe. If you cannot make it to the Gilbert Farmers Market and the one you're at doesn't offer eggs or cheese, then feel free to pick up those ingredients from the local grocery store. What not to forget if you want to make a Vegetable Omelet in the morning!

Vegetables

What to stuff inside your omelet is up to you. For some ideas, we would recommend red, green and yellow peppers, mushrooms, spinach, onion, tomato, or whatever else you might find pleasing to the tastebuds!

Cheese

Fiscalini cheese is a vendor at the Gilbert Farmers Market, head here to pick up a block of hand-crafted artisan cheese to grate for this omelet. Went to the Farmers Market and this vendor wasn't there? That's okay! Grab some cheese from your local grocery store, we won't tell.

Eggs

Farm fresh eggs are always a great addition to any omelet. Both the Funny Farm and Synergy Farms vendors offer eggs at the Gilbert Farmers Market. If you can't find them, pick up some eggs form the local grocery store is a good plan B!

Chop Vegetables

Finely chop up the vegetables of your choice on a cutting board. Once they are chopped, set aside.

Butter the Pan

While you are chopping the vegetables, make sure you have butter lightly melting on a low setting on the stove top. Be careful not to over heat the butter, which you will see if the butter starts to brown. 

Saute the vegetables

Once the butter is completely melted and the vegetables are chopped, saute the vegetables in the butter being sure to mix them all together. Once they are sauted, remove them from the pan and put them is a bowl to lightly salt and pepper them.

Prepare the Ingredients

Once the vegetables are lightly salted and peppered, make sure to set aside all the ingredients to be prepared to make the omelet. Mix together two eggs in a separate bowl, grate cheese into a separate bowl, and leave the vegetables in a separate bowl.

Directions:

Cook Eggs in the Pan

Using the same pan you used to saute the vegetables, cook the two mixed eggs. Make sure the eggs are cooked completely through by pushing the side of the omelet in to the middle to let the uncooked egg flow to the bottom of the pan. Once the egg is cooked through, you can continue onto the next step.

Add Vegetables and Cheese

In the center of the omelet leaving some room to one side, add vegetables and cheese. 

Fold the Omelet in Half

Fold the omelet in half with the vegetables and cheese in the middle Cook like this until the cheese is melted to your liking.

Honey-Soy-Glazed Salmon with Veggies and Oranges

Farmers Market Grocery List

Salmon

Asparagus

Full Ingredients:

4 tablespoons honey

1 tablespoon soy sauce

1 tablespoon Dijon mustard

1 teaspoon seasoned rice wine vinegar

1/4 teaspoon dried crushed red pepper

1 pound fresh medium asparagus

8 ounces fresh green beans, trimmed

1 small orange, cut into 1/4- to 1/2-inch slices

1 tablespoon olive oil

1 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

4 (5- to 6-oz.) fresh salmon fillets

Garnish: toasted sesame seeds

Directions:

1. Preheat broiler with oven rack 6 inches from heat. Whisk together honey and next 4 ingredients in a small bowl.

​

2. Snap off and discard tough ends of asparagus. Place asparagus, green beans, and next 4 ingredients in a large bowl, and toss to coat.

​

3. Place salmon in center of a heavy-duty aluminum foil-lined sheet pan. Brush salmon with about 2 Tbsp. honey mixture. Spread asparagus mixture around salmon.

​

4. Broil 4 minutes; remove from oven, and brush salmon with about 2 Tbsp. honey mixture. Return to oven, and broil 4 minutes more. Remove from oven, and brush salmon with remaining honey mixture. Return to oven, and broil 2 minutes more. Serve immediately.
